You could easily fit tires that wide, would recommend some wheel flares depending how wide you want to go, my race car has 15x7 wheels but the offset is such that I have to run those wider wheel flares.
Here's a mantra you could apply to any question you may ever have: Everything will fit/work with enough fabrication =P

Hasn't raced since 95, planning on racing it in vintage as soon as I can get it done. I have no clue what the tires would equate to since it's on goodyear race slicks. The size I have on it are 22x9x15

is there any clearance or rubbing issues with a 7" wide rim?...thinking in the area of a 195 or 205 mm (195/60 or 205/50 ish maybe)

You should easily be able to clear those with no rubbing issues. Maybe go to a c900 type wheel to switch up the offset, I'll try and get some good pictures of the rolling stock on the race car. Full lock this car wont rub the tire, no engine in it currently though, but dont ever recall it rubbing anything with the engine in either. Either way the tires on mine are far wider that a 205mm
